Maple Divinity
Yield: 40 candies
| 2 | cups | Pure maple syrup |
| 2 | Egg whites | |
| 1/4 | teaspoons | Salt |
| 1 | cup | Broken walnuts |
Bring maple syrup to boiling in a heavy three-quart saucepan. Without stirring, boil rapidly over medium-high heat until temperature of mixture reaches 260F (hard-ball stage) on a candy thermometer. Remove from heat. Immediately beat together egg whites and 1/4 teaspoon salt in a large mixer bowl with electric mixer until stiff peaks form (tips stand straight). Slowly pour hot syrup over egg whites, beating constantly on high speed. Continue beating five to six minutes more or until mixture forms soft peaks and begins to lose its gloss. Quickly stir in walnuts. Drop by teaspoonfuls onto a baking sheet lined with waxed paper, swirling each candy to a peak. (If mixture starts to harden, stir in a few drops of water.)
